Step 1
In a bowl, mash the avocado, till smooth. Mix in Pimientos, lemon juice, 1/4 teaspoon salt and pepper and set aside.
Step 2
Cut chicken breasts into halves, and sprinkle with the remaining 1/4 teaspoon salt and pepper. Mince 6 cloves of garlic and mix with the chicken. let the mi sit for 5-10 minutes to absorb flavor. Heat oil in a large skillet over medium heat. Cook chickens 8-10 minutes on each side till it forms a thin crust and brown. top with cheese, cover, and continue cooking until the cheese melts. Transfer the chickens to a serving plate top with the avocado mix and garnish with cilantro.
