Instructions

Step 1
Toss the chickpeas in oil and spices and roast for 25 mins in 400 degree oven.
Step 2
Cook the quinoa (2-1 ratio water to quinoa) on the stove brining to a boil and reducing to simmer 15-20 mins.
Step 3
In the meantime chop vegetables and feta to add to quinoa when finished.
Step 4
Make the sauce by combining ingredients and blending.
Step 5
Plate the parts by layering the sauce, the quinoa and then the chickpeas.
