Instructions

Step 1
1. Place your lukewarm water, sugar and yeast in the bowl of a stand mixer and let it sit for 10 minutes.

2. Add flour, oil and salt and mix on low for a few minutes, around 5 minutes, until it forms a ball.

3. Place on a lightly floured surface and form a smooth ball. Place it in a lightly oiled bowl. Cover and let it rest for 1 hour or until doubled in size.
Step 4
4. Spread 2tbsp of oil on the bottom and sides of a baking pan. Place the dough on top and spread out. Cover and let it rise for 20 minutes. In the meantime preheat your oven to 200C.
Step 5
5. Combine all the ingredients in a bowl, apart from the feta. Spread over the bread and bake for 35 minutes. Sprinkle on top the crumbled feta and bake for a further 5-10 minutes.
Step 6
6. Let it cool in the pan for 10 minutes before placing it on a wire rack to rest for 3 minutes before slicing.
