Tip - it’s better to use several baking trays, so that you roll out new pita dough as the other tray is in the oven.
Bottom line - pita bread is not easy to make. But if you have time and know how to make bread, it’s a very good recipe

Instructions
Step 1
Mix the flour, salt, sugar and yeast in a mixer bowl until well combined
Step 2
Add the water and oil, and knead for 8 minutes with the mixer hook on a slow speed. The dough should be quite sticky
Step 3
Spread a little flour on top of the dough and cover with cling film
Step 4
Proof for 60-90 minutes or until the dough doubled in size
Step 5
Take the dough out of the bowl and beat the air out of it. Divide to 20 equal pieces and roll each one into a ball
Step 6
Place the balls on a floured surface and place a towel on top of them to keep them from drying
Step 7
Heat the oven to 250 degrees C, and prepare a baking tray covered with a baking sheet
Step 8
Take as many dough balls as would fit on the baking tray, and with a rolling pin roll each one to a circle 15 cm in diameter. Place them on the baking sheet , cover and let rest for 15 minutes
Step 9
Place in the oven and bake for 5-6 minutes until they puff up
Step 10
Take the pitas out of the oven, remove them from the baking tray, and wrap them all in a towel to cool (don’t cool in the open air or they will dry out)
