For the simit dough:
300mlwater
1 Tbspsugar
580 grflour
20 grfresh yeast
alternatively 7 grams dry yeast
1 tspsalt
2 Tbspvegetable oil
For the syrup:

Step 1
Dissolve the sugar in the water

Step 2
Mix the dry ingredients: flour, yeast and salt

fresh yeast20 gr

To the mixed dry ingredients, add the sugar water and mix well

Add the oil and knead the dough with your hands or in a dough mixer

Once kneaded, oil a bowl and leave the dough to rise

For the syrup and roasted sesame:

Roast the sesame seeds in a dry frying pan, being careful not to burn them

Mix the syrup (honey was used) with the water

Assembly:

Once the dough has risen, divide it into 8-10 pieces and roll them into balls

Turn each ball into bagels by rolling the ball of dough into a long thin tourniquet. Then fold in half, twist the tourniquet and connect the ends

Dip each of the bagels into the syrup so that they are fully covered, and then dip them into the sesame seeds
Step 11
Place each of the covered simit bagels on a baking pan lined with baking paper and allow the bagels to rise for 15-20 minutes
Step 12
Once risen, bake at 180 degrees for 20 minutes or until golden brown
