Barton Springs Mill White Corn grits are available here: https://bartonspringsmill.com/collections/heirloom-corn/products/stone-ground-grits?variant=42668011979006 // Barton Springs Mill recommends dumping your measured amount of grits into a bowl of cold water before cooking. Then, skim off any white bits that float to the surface. With their milling/sifting process for the different corn products, it is impossible to remove all pericarp (outer, white/clear fibrous layer on corn, similar to bran for wheat). Pericarp never fully softens, which can skew cooking times or the perceived “doneness” of your polenta or grits. It can also impact mouthfeel. It’s not harmful, but it impacts texture & cooking time.

Instructions

Step 1
Measure all ingredients.
Step 2
Dump your measured amount (1 cup) of grits into a bowl of cold water before cooking. Then, skim off any white bits that float to the surface.
Step 3
Bring 4 cups of water or stock to a simmer over high heat in a saucepan.
Step 4
Add the strained grits. Bring to a boil over high heat, then lower the heat to low, cover with a lid, and cook for 30-40 minutes. Whisk every 5 minutes to ensure nothing sticks to the bottom of the pan.
Step 5
Adjust seasoning to your taste. Add butter and whisk. Cover with a lid and let sit off the heat for another 15-20 minutes.
Step 6
Meanwhile, cook diced bacon to render fat. Remove the bacon and caramelize diced onions using their fat. Add achiote sauce to the onions. Melt butter in a frying pan and cook shrimp/prawns. When almost ready, add achiote sauce and hot water to finish the process.
Step 7
Add grated Oaxaca cheese to the hot grits right before serving.
Step 8
Serve hot grits with melted cheese, crispy bacon, caramelized onions, and achiote Gulp shrimp. Garnish the dish with cilantro leaves. This is an iconic Texas breakfast! Enjoy!
