Instructions

Step 1
Mix together in a bowl flour, sugar, soda bicarbonate and a pinch of salt. Grate the lemon zest and add the vanilla extract too for extra flavour.

Step 2
Chop the cold butter in small cubes and add it to the mix. Work the dough with the tip of the fingers until the butter is completely absorbed and the dough has a sand-like texture. It's important that the butter and the bowl are cold so that the butter won't melt.
Step 3
Add the egg and yolk and mix well, first with a whisk and then with your hands, until the dough is smooth and not sticky. Let it rest for half an hour or more in the fridge
