Palmetto Tuna Salad is a refreshing salad full of crisp iceberg lettuce and palmetto hearts with white albacore tuna, tossed with smoothly emulsified lemon dressing.
This salad is so easy to make, inspired by the flavors of the Mediterranean for casual entertaining.

Dressing Ingredients
4 tablespoonsextra virgin olive oil
lemon juice
squeezed
1 teaspoonsdijon mustard
1garlic clove
large, pressed
½ teaspoonkosher salt
¼ teaspoonground black pepper

Step 1
To Make The Dressing; Whisk all the ingredients vigorously until they're emulsified. Set aside.
Step 2
Chop the iceberg lettuce roughly, Cut the hearts of palm crosswise into 1.5 cm rounds, Quarter the Artichoke Hearts, Cut the spring onions into slices.
Step 3
Toss the tuna, palm hearts, artichoke, scallions, corn and with 1/4 of the dressing in a large bowl.
Step 4
Toss the iceberg lettuce with the remaining dressing and divide among bowls. Top with the tuna salad, sprinkle the dried thyme on top and serve cold or at room temperature.
