Instructions

Step 1
Cut the lamb into small chunks and brown it in a pan with olive oil on medium heat for a few minutes. Add carrot, celery, zucchini, and bell pepper cut into chunks and cook until just soft, seasoning with salt and pepper.
Step 2
Prepare the cous cous by placing it in a bowl with olive oil. Bring water to a boil, turn off the heat and add all the spices, then pour it over the cous cous, cover, and let it rest for about 10–15 minutes before fluffing with a fork.
Step 3
Combine the cous cous with the lamb and vegetables, mixing well. Serve with finely sliced spring onion on top.
