Step 1
Preheat oven to 400. Spread panko on a baking tray, spray with oil, then bake for 5 minutes (until golden brown), transfer into bowl. Whisk egg, mayo, mustard, flour, salt and pepper until combined. Add the chicken into the batter and toss to coat. Place coated chicken into panko bowl and coat with panko. Transfer onto a baking tray. Spray lightly with oil (PAM), bake for 10 minutes (if small) to 15 minutes (medium to large)
