Prepare
Step 1
Preheat the oven to 110°c

Step 2
Peel, halve and chop the onions



Step 3
Peel and chop the garlic

Step 4
Dissolve the stock cube in the boiling water



Step 5
Put the sugar, cumin, cinnamon and chilli powder in a bowl, and mix to combine






Step 6
Rub the spice mix over the pork, covering the meat but avoiding the fat, and set aside

Step 7
Put the onions, garlic and stock in a large pot, and stir

Add the pork to the pot, fat-side up, and cover with a lid or foil

Cook in the oven for 8-10 hours, until the temperature is 90°c


Step 10
Transfer the pork to a chopping board

Step 11
Use a slotted spoon to transfer the onions to a bowl


Step 12
Cool the juices, then spoon away any fat on top

Slice away and discard the top layer of fat on the pork, then use two forks to pull or shred the meat

Transfer the pork to a large bowl and add the BBQ sauce, onions, and 360ml of the cooled cooking liquid. Stir to combine.



Serve or freeze

Serve with one of the suggested recipes, or cool fully then freeze for up to 3 months

To cook from frozen: defrost fully in the fridge then either microwave for 3-4 minutes, or in the oven at 180°c for 10-15 minutes
