Ingredients
6 servings
1red pepper
medium, or green, chopped
1 cupmushrooms
fresh, sliced
1 tablespoonolive oil
2garlic cloves
minced
2 cupsbrown rice
cooked
1can kidney beans
drained and rinsed
1 cupfrozen corn
thawed
¼ cupgreen onions
chopped
½ teaspooncumin
½ teaspoonpepper
¼ teaspoonsalt
6whole grain tortilla wraps
or veggie, warmed
½ cupshredded cheese
¾ cupsalsa
Instructions
Step 1
heavy skillet, saute red pepper and mushrooms in oil until tender. Add garlic; cook 1 minute. Add rice, beans, corn, green onions, cumin, pepper and salt. Cook and stir until heated through, 4-6 minutes.
Step 2
Spoon 3/4 cup rice mixture onto each tortilla. Sprinkle with cheese; drizzle with salsa. Fold sides of tortilla over filling; roll up. Serve immediately.
Step 3
**Skip tortilla and layer directly into a bowl if you prefer to do a bowl rather than a wrap
