Ingredients
1 servings
1tomato
medium, chopped
1cucumber
small, peeled and chopped in cubes
0.5onion
small, finely chopped
½ cupchickpeas
boiled, canned or from dry
3Kalamata olives
pitted and sliced
2 teaspoonscapers
3 ouncecanned sardines in olive oil
do not drain
1 tablespoonsfresh parsley
chopped
1 teaspoonsextra virgin olive oil
for drizzling
1 ½ tablespoonfresh lemon juice
ground black pepper
Instructions
Step 1
Mix the first 6 ingredients (tomato, cucumber, onion, chickpeas, olives, & capers) in a medium bowl.
Step 2
Add the sardines carefully, do not crush them or smash them. Add the lemon juice and gently toss, some sardines will break in smaller pieces.
Step 3
Sprinkle with parsley and drizzle with 1-2 teaspoons olive oil (as needed depending on how much you used from the canned sardines).
Step 4
Finish with some fresh ground pepper before serving.
