Instructions
Step 1
Place the whole sweet potato’s in their skin on a baking tray
Step 2
Slice the bulb of garlic in half and drizzle on some olive oil and place the rosemary sprigs before closing again and sealing in tinfoil.
Step 3
Place in the oven at 180°C for 40 mins and then remove
Step 4
Place the broccoli on the tray, drizzle with some more olive oil and salt and pepper and place back in for 10 mins
Step 5
In the mean time, bring your steaks to room temperature and season generously with salt and pepper
Step 6
Heat the neutral oil on high heat in a pan and fry the steaks on each side for about 3 mins depending on the thickness of the steak and your preference. Then leave to rest for 5-10 mins.
Step 7
Take the tray out and finally add the cherry tomatoes with a drizzle of olive oil and salt and pepper back in the oven for 10 mins
Step 8
Finally remove the sweet potato flesh from the skins, add in a knob of garlic butter, squeeze out the roasted garlic and add a dash of salt and pepper and mix to make the mash sweet potato
Step 9
Finally serve everything into two equal portions and enjoy!
