Easy Pineapple Sorbet

Instructions

Step 1
Line a baking sheet with parchment paper and set aside.
Step 2
Prep (see “Pineapple prep”) and cut the pineapple into cubes.
Step 3
Place the cubed pineapple onto the baking sheet, leaving space between the cubes.
Step 4
Freeze the pineapple for 3 to 4 hours or overnight, until completely frozen.
Step 5
Place the frozen pineapple into the bowl of a food processor and thaw for 10 to 15 minutes, or until softened.
Step 6
Pulse until the pineapple becomes crumbly.
Step 7
Add the lime juice and pulse again.
Step 8
Add a little warm water if needed until the mixture becomes more fluid, but not slushy. Or, thaw the mixture until it has a soft-serve texture.
Step 9
Taste and add honey, if desired, to sweeten.
Step 10
If the mixture becomes too slushy, freeze for 30 to 60 minutes to solidify.
Step 11
Serve immediately, or store in the freezer in an airtight container for up to 2 weeks
