Instructions
Step 1
Cut chicken breasts in half lengthwise to make 4 thin chicken breasts. Season both sides with garlic powder and lemon pepper seasoning.
Step 2
Add oil and butter to a pan on medium high heat. Add chicken and fry until chicken is cooked through, 3-4 mins per side. Remove from pan, place on plate, and set aside.
Step 3
To the same pan, add garlic and saute for 30 seconds. Then add in chicken broth and 1/2 a juiced lemon, scraping the bottom to get all the flavour bitties. Add in whipping cream and mix everything together. Add gnocchi and let boil for 5-7 minutes.
Step 4
Remove from heat and add in shredded Parmesan and spinach. Mix until spinach is wilted. Salt & pepper to taste if required: Add in chicken breasts and spoon sauce over top.
