Instructions

Step 1
Wash veggies, drain and chop.
Step 2
In large pot, heat 1 TBS olive oil and add onions and let simmer until translucent; then add pepper, zucchini, eggplant, then tomatoes (in that order). Let simmer until incorporated and smooth. Serve, salt to taste.
