Easy Traditional Ratatouille

The traditional ratatouille recipe is actually a vegetable stew! Not like the film suggests (even though Remy did make it fancy and beautiful)

Chopping
Step 1
Start with chopping all the vegetables in about 2-3cm (1 inch) chunks and the garlic and basil finely.
First batch vegetables
Step 2
In a pot add 1tbsp olive oil and, on medium heat, add the aubergine, zucchini and bell pepper. Cook for 5-7 minutes and empty the pot in a bowl
Aromatics
Step 3
In the same pot (emptied), add 1tbsp of olive oil followed by the onion, garlic, basil and thyme. Cook on medium for about 10 minutes
Cooking
Step 4
Add the previously cooked vegetables to the same pot, followed by the tomatoes. Add salt, pepper and balsamic vinegar and stir quickly. Cover with a lid and set on medium-low for 30minutes. Serve optionally with some bread!
