Mix all the dough ingredients and let rest for 30 minutes. Four folds over 2 hours, then let rest another 2 hours and pop into the fridge. Next day, oil your pan and dump the dough into the tray and let rise for 1.5-2 hours at room temperature. If the space is warm, it may be done in 1 hour. Dimple with more olive oil and spread toppings. Push the toppings in. Bake at 450 for 20-25 minutes, you can bake it directly on the floor of the oven for the last 10 minutes to get a crispy bottom. Sprinkle with salt as it comes out
