Soy Chorizo & Grilled Avocado Tostadas

Step 1
Prepare the tostadas: Heat about a ¼ inch of oil in a large frying pan over medium-high heat. When oil is hot, add as many tortillas as will fit without crowding the pan. Fry for one minute per side, then remove from oil and let drain on a paper towel or a cooling rack placed over a baking sheet. Repeat with remaining tortillas.
Step 2
Grill the avocados: Heat your grill or grill pan to medium-high heat. Slice each avocado half in half lengthwise again, so you have eight quarters of avocado. Drizzle lightly with canola oil and grill until grill marks are visible and the avocado has softened, about 2-3 minutes per side. Remove from heat and once cool enough to handle, gently remove peels from grilled avocado and slice into halves again, then season with salt.
Step 3
Prepare the Soy Chorizo: Remove Soy Chorizo from casing. In a large, nonstick skillet over medium heat, add soy chorizo, breaking it up into pieces as it cooks, about 8-10 minutes. When soy chorizo reaches 165°F, remove from heat.
Step 4
Assemble the tostadas: Layer tostadas with warm soy chorizo, shredded cheese, grilled avocado slices, and salsa to serve.
