Instructions

Step 1
If using the dried djon djon mushrooms, soak in water for 20-30 min. do not add too much water because it will take away flavor and the unique dark color. I suggest using doing about 1 cup of water at time until you get to about 3 1/2 - 4 cups

Pass the djon djon mushroom through a strainer making sure to get every drop of that dark gold liquid out

Heat a large pot over medium heat and add oil.

Once the oil is hot, add the epis and green onions. Sauté until fragrant, then add the lima beans.

Sauté for a few minutes, then add the washed rice, and butter. Toast the rice for a few minutes while stirring slowly.

Add the liquid from the soaked Djon Djon mushrooms. Season with salt, then add the Scotch bonnet pepper pierced with cloves.

Step 7
Increase the heat to medium-high. When most of the liquid has evaporated, reduce the heat to low.
Step 8
Shape the rice into a “mountain” in the pot, cover with foil, and let it finish cooking for about 15-20 minutes.
Step 9
Fluff the rice before serving and enjoy!
