Ingredients
10 servings
8 slicesbacon
cooked and chopped into pieces
4 cupsbroccoli florets
raw, cut into small pieces
8 ouncesshort pasta
0.5red onion
diced
½ cupdried craisins
⅓ cuppepitas
½ cupcheddar cheese
cut into cubes
½ cupshredded carrots
1 ¼ cupplain Greek yogurt
½ cupsour cream
1 ½ tspsalt
more to taste
1 tsppepper
more to taste
2 Tbspapple cider vinegar
2 tspsugar
Instructions
Step 1
Cook the pasta according to the package directions. Drain and rinse with cold water.
Step 2
Add the pasta to a large mixing bowl along with the broccoli, red onion, pepitas, craisins, cheese and carrots.
Step 3
Prepare the dressing: to a bowl add the yogurt, sour cream, salt, pepper, apple cider vinegar and sugar. Whisk together.
Step 4
Pour over the salad and mix well. Refrigerate at least 30 minutes before serving.
