Instructions

Step 1
Mix bulgur with cumin, paprika, coriander seeds, salt, and pepper. Cover with boiling water, cover with lid and let it cool down.
Step 2
In the meantime, chop cucumber, tomatoes, bell pepper and apricots to small pieces, and chop chili, parsley, mint, coriander finely.
Step 3
Mix tomato puree and ajvar under the bulgur. Add all chopped vegetables and herbs and mix well
Step 4
Add lemon juice and olive oil to taste
Step 5
Add pomegranate on top and gently mix
