Instructions

Step 1
Wash and cook quinoa according to packet instructions.
Step 2
Drain and chill the quinoa.
Step 3
For the salad
Step 4
To make the dressing; juice the lemon and mix with the olive oil and crushed garlic.
Step 5
Dice the cucumber, onion, tomato.
Step 6
Lightly toast the sunflower seeds and pistachio.
Step 7
Finely chop the mint and parsley
Step 8
Mix everything together in a large bowl
Step 9
Check seasoning and serve.
Step 10
Garnish with some rocket leaf, pistachio, cherry tomato, diced cucumber and lemon zest.
