This is a recipe that can be eaten all year round and served either as a side dish or mezze. I love this dish and eat it as a main course in smaller portions.

Instructions
Step 1
Preheat oven to 180c. Place beans in water and leave overnight. Rinse and drain the following morning. Add beans into a pot with water and boil for 40 minutes.
Step 2
Once the beans are ready rinse and drain excess water.
Step 3
Place onion, garlic, carrot, and half of the olive oil into a skillet and cook on medium heat for about 5 minutes. Add in the peppers and give it a quick stir. Remove from heat.
Step 4
Pour the Greek Butter Beans into a large baking pan and add the vegetable mix. Give it a good stir.
Step 5
Add in the grated tomatoes, tomato paste, salt, pepper, olive oil, and two cups of water. Stir and place into the oven.
Step 6
Garnish with dill and serve with feta cheese and fresh bread.
