Instructions
Step 1
Whisk the egg whites until stiff and gradually add the sugar.
Step 2
Mix mascarpone, yolks and pistachio paste together. Add the egg white foam, lifting it with a spatula.
Step 3
Dip the cookies in the matcha and place them on the bottom of the pan or cup. Put a layer of mascarpone foam on top. Repeat 2-3 layers.
Step 4
Let it rest in the fridge overnight and sprinkle matcha on top just before serving
