Tomato pesto gnocchi with capers

Instructions

Step 1
fry the pancetta in a pan with no oil, until crisp. remove using a spoon, saving as much fat as possible in the pan.
Step 2
add the gnocchi to the pan, mix until fully coated in fat. add 1 tbsp of olive oil for extra crispy gnocchi.
Step 3
cook for 10-15 minutes until crispy, folding in every 3 minutes.
Step 4
meanwhile, make the salad by combining halved tomatoes, 2 tsp sumac, 1 tbsp of olive oil and a pinch of salt.
Step 5
once the gnocchi is crisp, add the pancetta, pesto and capers to the pan. mix up and serve.
