Instructions

Step 1
. Add all the ingredients for the starter in a bowl and whisk together. Top gently with the flour and let it sit for 20 minutes.

2. Whisk together all the ingredients for the dough and starter. Whisk to combine.
Step 3
3. With the mixer on low, slowly add the flour and increase speed until a soft but sticky dough forms and easily pulls away from the hook attachment. This takes around 10 minutes.

4. Place dough in a lightly greased bowl, cove and let it rise for 2-3 hours.

5. Punch the dough down and divide in 2.
Step 6
6. Divide once again in 3. Stretch each piece out and roll into a log. Join the three ends together at the top and then make a braid. Once you reach the bottom, tuck the strands under.
Step 7
7. Place on a baking tray with baking paper and cover loosely with a kitchen towel. Let it rise for 1 hour. In the meantime preheat the oven to 180C/160C fan / 350F.
Step 8
8. Beat the egg with water and gently brush the glaze over the loaves. Bake for 25-30 minutes or until golden. Transfer to a cooling rack to cool before serving.
Step 9
Serve as is or with some jam or butter.
