Instructions

Step 1
Heat the oil in a large ovenproof frying pan over a medium to high heat.

Add the onions and garlic to fry for a few minutes until starting to soften

Add in the mixed beans, chopped tomatoes, tomato purée

and fajita seasoning.
Step 5
Give everything a good stir and bring to a gentle

simmer for a few minutes to thicken slightly

Season to taste then top with the tortilla chips and grated cheddar.

Place under a hot grill for a few minutes then scatter over the sliced

spring onions before serving.

Tip

Step 10
Once you’ve added the tortilla chips to this dish, it doesn’t keep very well in the fridge. So if you’re not making it for four people it might be best to batch cook the bean mix then add the tortillas and cheese to each individual portion when you’re ready to eat. The bean mix can sit in the fridge for 4 days and will also freeze really well.
