Instructions

Step 1
Preheat oven to 450. In a large bowl combine 4 tsp oil, garlic, oregano, lemon juice, lemon zest, salt and pepper. Add vegetables and toss to coat. Remove with slotted spoon and place on one side of baking sheet. Coat chicken with leftover marinade and place on other side of pan.
Step 2
Roast until vegetables are tender and chicken in cooked, about 20 minutes.
Step 3
Serve with pita bread
