Instructions

Step 1
Whisk the eggs in a bowl, then add the tomatoes, coriander, green chillies, spring onion and salt and stir to combine.
Step 2
Heat the ghee or butter and oil in a frying pan over a medium heat. When hot, add the cumin seeds and fry for 30 seconds until they splutter.
Step 3
Add the garlic and fry for a further 30–40 seconds until it is lightly browned. Add the egg mixture and scramble for 1–2 minutes until cooked. Serve immediately with freshly ground black pepper and chaat masala.
Step 4
This dish, together with cholay ka salan and aloo ki bhujia are best eaten with puri breads.
