Place creamed corn in a bowl and whisk in oil.

Fold in flour, baking powder and salt measure and leave to rest for 5 mins. These fritters should be the consistency of a thick pancake batter; if yours looks a bit too runny, add some more flour, a little at a time.

FRY IT

Heat a drizzle of oil in a frypan on low-medium.
Step 6
Use a 1⁄4 cup measure to scoop fritter mixture into pan and spread slightly with the back of a spoon.
Step 7
Cook, in two batches, for about 3 mins each side, until golden and cooked through.
Step 8
EAT IT
Step 9
Top with sour cream, sweet chilli sauce and fresh salad leaves from the garden.
