Easy 2-Ingredient Kimchi Pancakes

These easy 2-ingredient Kimchi Pancakes will become a weekly staple once you start making them! They are crispy, savoury pancakes with the big flavours and some crunch from kimchi. I know the dipping sauce technically makes this recipe more than 2 ingredients but I recommend that you don't skip it!

Ingredients

KIMCHI PANCAKES
1 cupkimchi
½ cupflour
¼ cupkimchi juice
the liquid the kimchi is sitting in
1 Tbspwater
as needed
Oil
for frying, be generous this is street food
DIPPING SAUCE
Instructions
Step 1
Place kimchi into a bowl and use scissors to chop roughly into smaller pieces.
Step 2
Mix flour and kimchi juice in until you get a thick batter - it shouldn’t be runny but also shouldn’t be a paste. Add water if needed.
Step 3
Before frying your pancakes, mix your dipping sauce by combining all the ingredients in a small bow and set asidel.
Step 4
To fry, heat a good splash of oil into your frypan.
Step 5
Add your pancake batter and fry on one side over medium heat until the edges start to crisp up.
Step 6
Flip and cook for just 1-2 minutes.
Step 7
Drain on some paper towel before cutting and serving! Sprinkle on some extra toasted sesame or spring onion if desired.
