1 tspminced ginger
1 Tbspoyster sauce

250mlchicken stock
400gcoconut milk
1 HeadsPok Choi
1 Tbspoyster sauce

Instructions
Step 1
1. In a large bowl add chicken and marinade ingredients, season well and marinate for at least 30 mins if you can. 2. Then cook chicken on both sides until cooked through.

3. While your chicken is cooking in another pan add olive oil, garlic & ginger, cook for 1-2 mins. Stir in curry paste and cook for 1-2 mins.

4. Pour in stock & coconut milk, season well. Add in Pok Choi, cover and simmer for 7-10 mins.

5. Serve with chicken with rice, curry sauce, lime wedge, coriander & chilli crisp.
