Red Beans and Rice

Classic New Orleans dish. Using bacon grease as the oil to cook the veggies kinda makes the dish. I’ll make bacon with breakfast, then save some of the grease to cook this dish later in the day.

Instructions

Step 1
Put two parts water and one part beans in a large bowl of water. Soak 8-10 hours.
Step 2
Slice sausage, then brown in a large pot. Remove and set aside to cool, then put it in the fridge.
Step 3
Add the bacon fat to the pot, then add diced onion, green pepper and celery. Cook for 5 min, then add garlic, and finish browning the veggies.
Step 4
Add Cajun seasoning, stir and cook for another minute or two.
Step 5
Drain and rinse beans, then add to the pot along with 6 cups of water. Ring to a boil, then reduce heat and simmer for 1-1.5 hours.
Step 6
Remove lid, then with a wooden spoon, smash beans against the side of the pot. It should still be a little watery at this point… continue to cook with the lid off for another 30 minutes.
Step 7
Things should have started to thicken by this point, so add the sausage back into the pot and heat through, stirring.
Step 8
Meanwhile, cook white rice. Dice green onions, then serve.
