Ingredients
6 servings
2 teaspoonskosher salt
2 teaspoonscoarse ground black pepper
1 teaspoongranulated onion
1 teaspoongranulated garlic
1 teaspoonlemon pepper
1 teaspoonancho chili powder
or you can use regular chili powder
¼ teaspooncayenne pepper
3 poundschicken thighs
bone-in, or chicken breast
2 teaspoonsneutral oil
6 tablespoonsunsalted butter
1yellow onion
sliced
6 tablespoonsall-purpose flour
4 cupschicken stock
preferably unsalted
6 cupswhite rice
cooked
Instructions
Step 1
Heat a large Dutch oven over medium high heat; alternatively, you can use a cast iron skillet.
Step 2
Mix salt, pepper, granulated onion, granulated garlic, lemon pepper, ancho chili powder, and cayenne pepper in a small bowl.
Step 3
Season chicken on all sides with seasoning mixture, making sure to pull back the skin to season the meat.
Step 4
Pour oil into the pre-heated Dutch oven.
Step 5
Brown chicken on both sides, about 6 minutes. Remove chicken and set aside.
Step 6
Add butter and sliced onions to the Dutch oven and stir with a wooden spoon or spatula, scraping any food stuck to the bottom as needed.
Step 7
Sauté onions until softened and translucent, about 5 to 7 minutes.
Step 8
Gradually add flour and stir until well incorporated with the onions and butter.
Step 9
Add chicken stock and whisk vigorously until a smooth gravy forms.
Step 10
Bring gravy to a low boil and return the chicken thighs back to the Dutch oven.
Step 11
Cover and reduce heat to low.
Step 12
Simmer chicken in the gravy for 1 hour, or until chicken thighs are tender and cooked through; stir occasionally.
Step 13
Plate chicken on cooked rice and spoon extra gravy on top; serve immediately.
