Crispy Salt & Pepper Mushrooms π 20 minutes stand between you and these crunchy snacckkksss
I love having enoki mushrooms in the fridge because they are so vers - use them in stews, in stir fries etc. but my favourite way of cooking them is shallow frying them after tossing in a simple dry batter π€€ this version uses similar seasoning that you'd find on a chinese salt & pepper squid - perfect for your plant-based friends and fam π

Instructions
Step 1
1) Cut the roots of your enoki mushroom, wash and soak in water for 5 minutes. Drain and separate into smaller bundles by tearing at the root. Pat dry.
Step 2
2) On a plate, mix together the flour, potato starch and kosher salt. Toss each bundle of mushrooms through the flour and set aside. In a small bowl, mix together the pepper powders and flakey salt. Set aside.
Step 3
3) In a frying pan over med-high heat, heat up 1cm of frying oil until just before smoking and add the mushrooms to the pan (make sure you don't overcrowd!). Fry for about 4-5 minutes on either side or golden brown. Once fried, place onto a plate lined with a paper towel and immediately sprinkle both sides with the salt & pepper mix.
Step 4
4) In a frying pan (or the same pan that has been cleaned) heat up 1 Tbsp of oil and fry the garlic for 30 seconds, then add the chilli and fry for another minute. Add the spring onion greens and turn off the heat.
Step 5
5) Place fried mushrooms onto a plate, top with the garlic chilli mix and more of the salt and pepper seasoning. Devour while hot!
