Instructions
Step 1
Heat olive oil in a large pot over medium-high heat.
Step 2
Add the ground chicken and cook for about 5 minutes, breaking it apart as it browns.
Step 3
Stir in the onions and continue cooking for another 5 minutes until the chicken is fully cooked and onions are softened.
Step 4
Add garlic and red pepper flakes, cooking for another 30 seconds.
Step 5
Stir in the orzo, chicken broth, and heavy cream.
Step 6
Once it begins to bubble, reduce heat to medium and let it simmer for about 10 minutes, stirring often to prevent sticking.
Step 7
Once the orzo is tender, remove the pot from the heat. Stir in the Parmesan cheese and baby spinach.
Step 8
Cover the pot for 3-5 minutes or until the spinach has wilted and the orzo has thickened to your liking.
Step 9
Season with salt and pepper, adjust the creaminess and seasoning as needed, and serve warm.
