One of my most popular recipes on social media, this Hot Honey Halloumi Avocado Toast is just the dream combination: toasted sourdough, crushed avocado, chopped parsley and lemon. Fry off your halloumi with a sticky and spicy honey-chilli mix and pair it with a 6-minute egg.

Instructions
Step 1
• In a bowl, mash the avocado and mix in the parsley, lemon juice and spring onion. Season with salt and pepper to taste, and set aside.
Step 2
• In a separate small bowl, combine the honey, chilli flakes and a pinch of salt. Warm this mixture in the microwave on HIGH for about 15 seconds or until it turns runny.
Step 3
• Fill a small pan with water and bring to a gentle boil. Carefully add the eggs and let them simmer for 6 minutes, then transfer to a bowl of iced water for 3 minutes. Once cooled, peel.
Step 4
• While the eggs are cooking, fry the halloumi slices over a medium-high heat for about 2 minutes on each side, drizzling it with the honey-chilli mixture as you flip the slices occasionally, until the halloumi is golden brown and sticky.
Step 5
• Meanwhile, toast your bread.
Step 6
• Assemble your dish by first spreading the avocado mixture onto the toasted bread slices. Then top them with the sticky halloumi and any additional toppings, and place the halved soft-boiled egg on the side or on top of each slice, based on your preference.
