Ingredients

1 cupdates
finely chopped
1 tspbicarb soda
1 cupwater
boiling
125gbutter
softened
1 tspvanilla extract
1 cupcaster sugar
1egg
225gplain flour
Topping
Instructions
Step 1
Finely chop one apple and finely slice the other
Step 2
Preheat oven to 180 degrees.
Step 3
Grease a deep (23cm) square pan.
Step 4
Combine apples, dates and bicarb in a large bowl.
Step 5
Add water.
Step 6
Cover with wrap and stand for 10 minutes.
Step 7
Beat butter, vanilla, sugar and egg until light and fluffy.
Step 8
Add creamed butter mixture to apple mixture.
Step 9
Stir in flour.
Step 10
Pour mix into pan and bake for 50 minutes.
Step 11
Spread warm topping over the cake.
Step 12
Return to oven and bake 20 minutes or until topping has browned.
Topping
Step 13
Combine all ingredients in a medium saucepan and stir over low heat until butter is melted and sugar dissolved.
