This is a great condiment to serve with meat, veggies even great spread on toast. This recipe yields two great items a delicious spread and garlic infused olive oil to use in future salads.

Instructions
Step 1
Preheat oven at 400 degrees F
Step 2
Pour 2 cups of olive oil into a deep baking pan, Add the peeled garlic cloves.
Step 3
Cover baking pan with foil and let garlic roast in olive oil for at least 90 minutes
Step 4
Let garlic cool in oil
Step 5
Drain oil from roasted garlic cloves, Set 1/2 cup of oil aside for puree. Remaining oil use for future salads and cooking
Step 6
With food processor, place softened roasted garlic cloves in bowl with salt, pepper, chives and parsley.
Step 7
Puree mixture for at least 30-45 seconds before adding olive oil
Step 8
Slowly drizzle oil into processor while mixing to fully incorporate into puree.
Step 9
Stopping occassionally to scrape bowl, continue into desired consistency of slightly chunky peanut butter.
