Instructions

Step 1
For Tangzhong mix water and flour in a saucepan and cook on low heat until it gets thickens. wrap up and and let it cool.
Step 2
In a bowl of stand mixer fitted with a dough hook, add every ingredients except butter.
Step 3
beat the dough on low speed for 6 minutes. Add cubed butter and mix on medium speed for 4~6 minutes.
Step 4
Place the dough in bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place until it gets doubled in size.
Step 5
After the dough has risen, divide it into 10 pieces. Roll each piece into a ball, cover with damp cloth and wait for 15 minutes.

Shape the bagels

Preheat your oven to 425 degrees Fahrenheit

In a large pot, bring water and brown sugar to a boil.
Step 9
Boil the bagels about 10~20 seconds on each side.
Step 10
Place the boiled bagels on a baking sheet and add your favorite toppings.
Step 11
Bake in the preheated oven for about 10 minutes, until they are golden brown

Let the bagels cool on a wire rack before serving. Enjoy!
