Step 1
Cut lemon I to wedges and squeeze into large bowl. Crush and peel garlic, roughly chop onion & add all ingredients to a large bowl with the chicken. Cover and refrigerate overnight. Discard brine and put chicken in slow cooker in high for 4-6h or low 8h or until a thermometer inserted reads at least 165°F in the thickest parts near the bone. Check several spots. Remove chicken to cool. Discard skin or save for chicken broth later. Eat as is or use meat in recipes such as salad, pasta salad, etc.
