Instructions
Step 1
Grate the zucchini into thin slices and cut the onion into pieces. Place both in a bowl with salt and pepper. Put a weight (e.g., a plate) on top of the contents of the bowl to help press out the water, and wait for about 3 hours.
Step 2
Now, in another bowl, mix flour, olive oil, cornmeal, and salt, and whisk everything into a homogeneous mixture.
Step 3
Drain the water from the bowl with the zucchini and onion slices, and pour the flour mixture over them.
Step 4
Mix this well and then spread everything onto a baking sheet. Spread the mixture evenly on the sheet to form a layer about 2 cm thick.
Step 5
Sprinkle some more cornmeal, salt, olive oil, and optionally rosemary over the baking sheet.
Step 6
Backe dies nun im Ofen bei ca. 180°C für 30min.
