One of the signature dishes of China's Sichuan province, Dan Dan Noodles. Flavorful doesn't even begin to describe this dish - It's savory, spicy, acidic, nutty, and even tingly. This dish are always a crowd pleaser.

150gground pork

1 tsphoisin sauce

1 tspShaoxing wine

1 tspdark soy sauce

¼ tsp5 spice

¼ cupSui mi ya cai
Sauce

2 Tbspsesame paste

2 Tbspsoy sauce

2 Tbspblack vinegar
chinkiang

¼ tsp5 spice

¼ tspsichuan peppercorn powder

¼ cupchilli oil

1clove garlic

Instructions
Meat Topping
Step 1
In a pan over medium heat, add 1 tbsp of peanut oil, the ground pork, and ginger.



Step 2
Once the pork is cooked, add the hoisin sauce, shaoxing wine, soy sauce, 5-spice, and sui mi ya cai. Combine and remove from the heat.





Cook Noodles
Step 3
Bring a pot of water to a boil and cook the wheat noodles. Save the noodle water.

Sauce
Step 4
Combine sesame paste, soy sauce, black vinegar, 5-spice, sichuan peppercorn powder, chilli oil, grated garlic, and 3 tbsp of the noodle cooking water.








Assembly
Step 5
Combine the noodles, sauce, meat topping. Garnish with chopped scallions and peanuts.
