Ok these are seriously the easiest noodles you’ll ever make and the flavour is amazing
This is the perfect easy vegan dinner idea, also would be a great one for meal prep! I even reckon if you were having some mates over and wanted to make something suuuper budget friendly, this would be perfect!
I’m struggling to find out exactly where chilli oil noodles originated from. It seems there are different styles from different provinces in China. Tbh I have seen these recreated so many times I just kind of winged this recipe based off what I’ve seen, so I doubt it’s anything traditional 🤷♀️

Step 1
Boil the noodles then drain and transfer to a large bowl
Step 2
Mix in the sauces and half of the cucumber and spring onion
Step 3
Top with the rest of the cucumber, spring onion, crushed peanuts and chilli flakes and enjoy
