Step 1
Boil water in a pan with some salt, and meanwhile take the wonton wrappers and with a sharp knife cut the stack into thick strips. Make sure you cut thick strips, because thinner ones will form a clump together once cooked.
Step 2
Cook then prepared noodles in batches agin to avoid clumping and keep the rest covered with wet muslin cloth. Cook them in boiling water for just 1-2 minutes or till they turn translucent. Do not over cook them, otherwise they'll break. Strain the wonton noodles and SAVE THE WONTON WATER FOR THE BROTH. Transfer the noodles in cold water to stop the cooking process. For the broth: Heat oil in a pan and add all the ingredients with some salt & pepper (to taste). Add the saved noodle broth and cook till everything comes together and the broth thickens to your liking. Transfer the noodles in a serving plate and pour warm broth over, drizzle some chilli oil for that extra kick and enjoy !!
