Hand Pulled Noodles
Step 1
Combine the salt and flour in a bowl and slowly drizzle in the water. Knead until all the flour is hydrated (~1 minute). Cover and rest for 30 minutes.

Step 2
Knead the rested dough for 2-3 minutes until smooth. Cut dough into 4 even pieces and roll each piece into 15 cm (6 in) logs.
Step 3
Coat the dough in oil, cover, and rest for 2 hours to allow gluten to relax. Once the dough is done resting, bring a pot of salted water to a boil.

Step 4
To make noodles, roll out the log and make a lengthwise indentation in the middle with a chopstick. Holding each side of the dough, slap and pull the noodle against the work surface (5-10 times). Tear the noodle at the middle of the indentation. (refer to video).
Step 5
Boil the noodles for 1 minute.
Step 6
In a bowl, top the cooked noodles with the minced garlic, chilli flakes, chopped scallion, soy sauce, black vinegar, and a pinch of salt.

Step 7
Heat the peanut oil until it reaches smoking point and drizzle over the noodles, aiming for the chilli and garlic. Mix and enjoy.
