Step 1
1. Remove heads and peel prawns, reserving heads and shells. Devein, rinse, pat dry, and season with salt, pepper, and paprika. Set aside.
Step 2
2. Heat half the oil in a frying pan (use Olive Oil for a softer flavour), add 3 crushed garlic cloves and chilli flakes. Cook for 1 minute, then add prawn heads and shells. Cook on medium-low heat for 7-10 minutes to infuse the oil, then strain.
Step 3
3. Heat the infused oil in a terracotta ramekin(or on frying pan), add the remaining oil and remaining thinly sliced garlic. Cook until fragrant.
Step 4
4. Add prawns and cook for about 2 minutes on each side.
Step 5
5. Drizzle with lemon juice, sprinkle with chopped parsley, and serve with crusty bread.
