Spaghetti Squash Tomato & Asparagus Bake

Instructions

Step 1
Preheat oven to 375 degrees.
Step 2
Line a rimmed baking sheet with parchment paper.
Step 3
Place spaghetti squash on baking sheet and drizzle with ½ Tbsp. olive oil and season with a pinch of sea salt and fresh pepper.
Step 4
Bake for 15 minutes.
Step 5
Place asparagus and tomatoes in a bowl and drizzle with remaining ½ Tbsp. olive oil, Italian seasoning, pinch of sea salt, and fresh ground pepper.
Step 6
Remove spaghetti squash from oven and add the asparagus and tomatoes to the sheet. Bake for another 10 minutes.
Step 7
Enjoy with 4 oz. of your favorite prepared protein such as grilled chicken, white fish, or grilled tempeh.
